Frozen Banana Bites Recipe

The sun is starting to shine!  Are you craving something cold and delicious that's also healthy?  These frozen yogurt banana bite pops are perfect for a summer afternoon snack for the whole family!  Plus, you can make a bunch quickly and keep them in the freezer for whenever you're feeling snackish.

What you'll need:

  • 3/4 cups plain greek yogurt
  • 1 teaspoon vanilla extract
  • 1 drop liquid stevia (or preferred sweetener)
  • 2 bananas, cut into half inch slices
  • 2 tablespoons coconut
  • 1.5 tablespoons finely chopped walnuts
  • 2 tablespoons mini chocolate chips

Directions:

In a bowl, combine yogurt, vanilla and stevia (or whatever sweetener you choose) and mix to combine.

Line a cutting board or baking sheet with parchment paper and set it off to the side.  You'll need it in a second.

Working in batches, place the slices banana into the yogurt mixture and carefully coat the bananas. Use a spoon and be careful not to break the banana. Be generous with the mixture - really slop it on there.

Once the banana slices are adequately coated, place them onto the parchment paper so that they're not touching each other.

When you have all the bananas covered, top each banana bite with either chocolate chips, walnuts, or coconut (really you can use any topping of your choosing). Lightly press the topping into the bite with a spatula so that it will stay stuck in the yogurt.

Place the cutting board into the freezer for at least one hour to set.  Once they've hardened you can put them in an airtight container to keep them fresh and store them in the freezer.

When you're ready to eat your delicious banana bites it's best if you remove them from the freezer and let them sit at room temperature for five to seven minutes.  Otherwise your teeth are going to get mad.

Enjoy your yummy treat - and only share with the kids if you have to (it's much better when you get them all for yourself)!
