These delicious lemon glazed blondies are perfect when you want a classic treat with a fresh twist!  They are the perfect way to invite warmer weather into your kitchen and are fabulous to serve at parties or family dinners.  Especially if you're a big fan of lemon flavored things.....which I just happen to be.

INGREDIENTS:

 FOR THE BLONDIES

  • 3/4 cups flour
  • 1 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter
  • 3/4 cups granulated sugar
  • 2 eggs 

FOR THE GLAZE

  • zest of 1 large lemon split in half
  • juice of 1 large lemon
  • 1 cup powdered sugar

 

DIRECTIONS:

Preheat the oven to 350 degrees. Grease and flour an 8×8 inch baking dish and set it aside.

In a bowl mix the flour, sugar, salt, and softened butter until combined.  In a separate bowl whisk together the eggs, lemon zest, and lemon juice until combined.  Combine both mixtures and beat until smooth and creamy.

Pour into the prepared baking dish and bake for 23-25 mins, it should turn golden around the edges.  You can test the middle of the blondies with a toothpick, if it comes out clean they are ready to come out of the oven.

Cool completely before glazing.

For the Glaze put the powdered sugar in a bowl and whisk with 1/2 the lemon zest and juice until mixed well.  Spread the glaze over the blondies evenly then sprinkle on the remaining zest.

Cut into bars and serve.
